Aimer, a STORY OF LOVES

In the enchanting  Provence, amidst the melodies of cicadas and the fragrant lavender breeze, Marie, a dreamy and reserved child, discovered her love for pastry walking down to the village to buy viennoiseries . Influenced by her pianist mother and landscape architect father, her artistic spirit flourished early on then. Despite passionating law and criminology studies at the University of Aix-Provence, her  true passion unfolded when she met a Vietnamese chef, in Paris.

Together, they embarked on a culinary journey, creating two restaurants, a cooking laboratory, writing a book, and establishing a culinary consulting business, flavory memories, a special and incredible boy, unforgettable travels and life experiences.

In 2019, Marie's fascination with New York became a reality. However, the pandemic in March 2020 prompted a life-altering decision. Seizing the opportunity, Marie transformed her child dream into reality by opening a homemade bakery in her Brooklyn brownstone.

Amidst the chaos, Marie's creations provided solace, drawing customers from diverse backgrounds. After a bustling 18 months, she along decided to take a new venture to the Californian coast, bringing the essence of her French spirit to Los Angeles.

Crossing the country by car truly marked a significant chapter in her journey. After changing her life, she leading her to embrace a new community, explore innovative recipes and techniques, and cultivate new meaningful connections.

 

Choosing the business name "Aimer", anagram of Marie in French, which mean Love,  was very symbolic She was guided by a dream and a connection to the invisible, allowing these ethereal elements to shape her entrepreneurial path. Marie learnt as the same time that her great-grandfather had been a baker in the North of France to Lille in a bakery called "L'independante". 

The name not only reflects her identity but also infuses a sense, a  taste of love and intention into her pastries.
